This winter inspired Gose is brewed with locally foraged Douglas fir, spruce, and cedar branches along with sea salt and then soured in tank with a house lactobacillus strain. We then ferment it with our house Ale yeast and add both cranberry purée and cold pressed Starvation Alley cranberry juice at the tail end of fermentation. After fermentation this tart wheat beer is conditioned on cracked Indian coriander, grains of paradise, Ceylon cinnamon, and fresh citrus zest.
